This carrot cake is all things healthy, and all things delicious. Indulgently spiced with cinnamon, nutmeg and ginger. All you have to do is add 1/4 cup oil, 1/2 cup buttermilk and 1/2 cup fresh grated carrot to the mix and bake for 35 mins in the oven, 3 mins in the microwave.
